3:00pm – There are two tables of customers already eating. (Customers 1&2 order #005-28952) (Customers 3&4 order #005-28953) Tara is sitting at the break table. Tara is not on break. Adria is leaning at the counter.

3:01pm – Adria goes to check on customers 1&2. They hand her cash to pay for their order. Adria takes the cash to the register to process the payment.

3:03pm – Adria takes customers 1&2 their change. They hand her a $20 for change. Adria takes it to the register to exchange it for smaller bills.

3:05pm – Adria counts the cash in the tip bucket and exchanges smaller bills for larger ones from the register.

3:08pm – Adria restocks cups then stands around by the counter. Tara is still sitting at the break table.

3:10pm – Customers 1&2 leave. Adria cleans off the table they left.

3:13pm – Tara gets up from the break table to rinse off the dishes Adria cleared from the table and loads them into a dish rack.

3:16pm – Tara returns to sitting at the break table. Tara is not on break. Customers 3&4 go to the register to pay for their order. Adria process their cash payment and hands them an empty to-go box for their leftovers.

3:19pm – Adria returns to standing around at the counter.

3:21pm – Customers 5&6 enter together and sit at a booth. Customers 3&4 leave.

3:22pm – Adria greets customers 5&6 with silverware then goes to get them drinks. She then rings in their order. (Order #001-61103)

3:24pm – Tara gets up from the break table, goes to the kitchen and begins working on the order for customers 5&6. Adria cleans off the table customers 3&4 left.

3:30pm – Adria stands around at the counter. Tara plates the food for customers 5&6 and takes it out to them.

3:32pm – Customer 7 enters and goes to the register. Adria greets him and rings in a take out order for him. (Order #001-61104) Tara unloads the dishwasher and puts the plates away.

3:33pm – Customer 7 pays for his order with a card and sits to wait for his food.

3:34pm – Tara works on the order for customer 7. Adria stands around.

3:36pm – Someone walks in, hands something to Adria and leaves. ?

3:40pm – Tara packs up the takeout order for customer 7 and hands it to Adria. Adria hands it to customer 7 and he leaves.

3:41pm – Adria stands around. Tara cleans the grill.

3:47pm – Tara sits at the break table again. Tara is not on break.

3:49pm – Adria sits at a booth.

3:50pm – Adria gets up, paces around then stands at the counter.

3:51pm – Tara gets up from the break table and goes to the register. She rings in a no bev order. (Order #001-61105) Tara then clocks out for break.

3:53pm – Adria checks on customers 5&6 and gets them drink refills. She then paces around the restaurant.

3:54pm – Adria clears the empty plates from customers 5&6. They then hand her a card to pay for their order. Adria takes it to the register to process the payment and hands them their CC receipt.

3:55pm – Adria goes to the kitchen to rinse dishes and runs the dishwasher.

3:57pm – Adria gets a drink refill and a to-go cup for customers 5&6. She then closes out their ticket and takes the tip from the register and puts it in the tip bucket. Adria then exchanges smaller bills for larger bills from the tip bucket.

359pm – Customer 5 goes to the restroom and Adria stands around talking with customer 6.

4:08pm – Customers 5&6 leave. Adria cleans off the table they left.

4:11pm – Adria stands around.

4:18pm – An online order comes in. (DD Order #999-16521) Adria goes to the kitchen to work on the order.

4:22pm – Tara goes to the register to clock back in from break. She then goes to the kitchen to help Adria pack up the online order.

4:24pm – Adria goes to the register, clocks out for break and goes to sit at the break table.

4:27pm – Tara finishes packing up the online order and sets it on the counter.

4:28pm – A delivery driver enters and goes to the restroom. Tara goes to the kitchen to unload the dishwasher and put the dishes away.

4:30pm – The delivery driver returns and goes to the register. Tara greets her, confirms the order and the dasher leaves. Tara then walks around the restaurant checking that all of the condiment caddies are full.

4:35pm – Tara checks tablet duties and begins deep cleaning the stove area.

4:52pm – Tara stands in the kitchen and checks her phone.

4:56pm – Adria clocks back in from break. Her and Tara stand around talking.

4:58pm – An online order comes in. (DD Order #999-16522) Tara goes to the kitchen to work on the order. Adria stands around.

Summary:

• Tara: Employees are forbidden from sitting on the job except in the break area while on meal break. Time spent sitting around will be deducted from hours for the day as a break. Employees are being paid to work, not sit around. There was excessive sitting. Why? Per video view, 25mintues will be deducted from Tara’s time for the day. It is likely more time than this was wasted.
• Tara: Using cell phone in kitchen or in front of customers is not permitted.
• Adria: Sitting while on duty except while on meal-break if prohibited. Sitting in customer seats is prohibited. It's unprofessional.
• Adria stand around a lot.
